Ingredients
10 pounds frozen chitterlings, thawed and cleaned
1 cup of onion, roughly chopped
2 teaspoons of salt
1 teaspoon minced garlic
1 teaspoon crushed red pepper flakes
2 teaspoons of Tony Chachere
3 boxes of unsalted 32 oz chicken stock
Instructions
Step 1
After following the Step-by-Step Guide to Cleaning Chitterlings. You can use water from the tap, but I gather the ingredients and mix in 1 box of chicken stock
Step 2
1st hour, place cleaned chitterlings in a 6-quart pot and cover with two boxes of chicken stock. Bring the pot to a boil.

2nd hour, add onion and season with salt, garlic, and red pepper flakes.
Step 4
3rd hour, add 2 teaspoons of Tony Chachere
Step 5
Simmer until chitterlings are clear to white in color and reach desired tenderness, 3 to 4 hours.
