Rushion’s Kitchen Jamaican Festival Bread

Ingredients
1 ½ cup Bread Flour
7 tablespoons of white granulated sugar
¾ cup of oat milk
1 teaspoon of vanilla extract
½ cup of yellow cornmeal
¼ teaspoon of salt
2 teaspoons of baking powder
Instructions
Step 1
Heat peanut oil to 360 degrees
Step 2
Combine dry ingredients in a bowl. Gradually add milk, and knead into soft, non-sticky dough. Dough should be soft but not sticky and wet. Remember not to over knead.
Step 3
Cover and rest the dough for 2 hours in the refrigerator
Step 4
Form golf ball-sized pieces into thick ovals with a gentle back-and-forth motion.
Step 5
Fry for 10 mins, flipping midway over low-medium heat until golden and cooked.
Step 6
Remove, drain on a rack, and let cool. Serve while it’s still hot.
